New Food Wednesday - June 13, 2012


We're back after a two week hiatus!

For today's NFW post, think Venice and Northern Italy, and remember most of Italy is coastline...

It's squid (aka cuttlefish) ink pasta, or Spaghetti al Nero di Seppia as the locals would say. 

Due to the entrenched maritime traditions of the region, squid has been a mainstay of Italian gastronomy since well, forever!  After the invention of pasta sometime in the 10th century it became a no-brainer for enterprising Italian grandmothers, you know the ones with forearms that make Popeye look puny,  to incorporate the cuttlefish ink into their pastas destined to be accompanied with various marine critters. 

The ink itself, which interestingly enough is also used to make sepia pigments, lends a gentle, sweet brininess to the pasta that pairs beautifully with a few shrimp or ironically some calimari.

Eat good food.  Drink good beer.  And above all, stay classy!
