New Food Wednesday - July 11, 2012

No these aren't some funky ravioli or thinly sliced exotic fruits...

They're cockscombs, you know those little pointy things on top of a rooster's head.

Used throughout Europe, and considered by many to be a delicacy, it has fallen out of popularity in the U.S., and is unfortunately relegated to specialty meat shoppes and designer-butcheries.

When the combs are used, it is often combined with other forms of organ meats including the kidneys, gizzard(s), and liver.  Notably in Italian cuisine, the combs are an important ingredient in the famous sauce called Cibreo, which also includes chicken livers, wattles and unlaid eggs.

While I have personally never tasted these "unique eats," according to other sources they taste not quite entirely unlike chicken.

Eat good food.  Drink good beer.  And above all, stay classy!
